An adaptation of breakfast potatoes served at my favorite local breakfast/brunch place. Would be great for dinner too!
Preheat oven to 425 degrees.
Chop potatoes, onions, peppers into bite size pieces, and toss with olive oil. Add salt, pepper, and smoked paprika and mix together.
Put on a baking sheet and bake for 50 minutes, or until potatoes are cooked through, stirring occasionally.
Add cheese and parsley (if using) to potatoes when they are done cooking, and stir to combine.
