Description

This is a great way to use some of that summer squash that your garden is producing!

Ingredients

  • 1 pound Yellow Squash
  • ½ cups Chopped Onion
  • 1 cup Peeled, Seeded, Chopped Tomatoes
  • Salt And Pepper, to taste
  • 3 Tablespoons Bacon Grease
  • 6 slices American Cheese

Preparation

Preheat oven to 350 degrees. Spray a 1-quart casserole dish with nonstick cooking spray.

Cut squash into 1/4-inch slices. Place squash and chopped onion in a medium saucepan. Add water just to cover the vegetables. Bring to a boil and simmer 5 minutes, then drain thoroughly.

Combine squash, onion, tomatoes, salt and pepper and pour into prepared casserole dish. Drizzle bacon grease over the squash and top with sliced cheese. Bake for 20-25 minutes until heated through and cheese is melted.

I made a version of this and it turned out great! I didn’t peel the tomatoes, because I was being lazy, and probably should have.

Also, added some roasted green chilies from my garden and some red pepper flakes because we love spice – great addition!

Just made this. The most difficult part….peeling the maters! Lovely colorful dish that taste yummy. I served it with Dijon Crusted Chicken Breast posted here by sweetlilpiggy. I added some zucchini simply because I have an abundance of it, as well as squash coming in just now.
