Description

Plate and serve with your favorite comfort food. Lightly bitter, lightly salted with a hint of vinegar, cooked greens really make it worth every bite. This recipe uses kale but there is always spinach, and thank God for ‘Popeye the Sailor Man’. Greens make you feel healthy, and this recipe is no exception.

Ingredients

  • 3 slices Bacon, Diced, And Cooked
  • 1 whole Bunch Of Kale, Stalks Removed And Leaves Chopped
  • 3 cups Boiling Water
  • 1 Tablespoon Reserved Bacon Fat (see Above Bullet Point)
  • 2 cloves Garlic, Chopped
  • 1 cup Chicken Stock
  • 1 Tablespoon White Vinegar
  • 1 teaspoon Salt To Taste
  • 1 teaspoon Cracked Black Pepper, To Taste

Preparation

Begin by cooking your bacon, while at the same time trimming your kale. Toss your kale into the boiling water and cook for about 5 minutes. When done, strain the kale.

Once the bacon is cooked, remove with a slotted spoon and reserve about one tablespoon of the bacon grease. Toss in the garlic, saute for a minute, add the stock, drained kale, vinegar, and salt and pepper. Reduce the heat to low and cook down for about 7 minutes. Add the cooked bacon back in and give a good stir.

Plate and serve with your favorite comfort food.

I usually add a touch of sugar to my greens as well as a little tobasco. Otherwise sounds quite good!

yum i love greens with sweet cornbread on the side to sop up the vinegar/green juices.
