Description

Snake gourd chock full of spices to keep your tastebuds on fire.

Ingredients

  • 3 Tablespoons Vegetable Oil
  • 1 teaspoon Mustard Seeds
  • ½ teaspoons Cumin Seeds
  • ½ teaspoons Fennel Seeds
  • 1 teaspoon Red Chili Flakes
  • ¼ teaspoons Turmeric Powder
  • 1 sprig Curry Leaf (I Didn’t Have Any But Highly Recommended!)
  • 1 piece Ginger (Thumb-sized), Sliced
  • 1 whole Large Red Onion, Peeled And Chopped
  • 1 whole Snake Gourd, Peeled, Pith Removed And Cut Into 1-inch Pieces
  • 1 whole Tomato, Chopped
  • 1 teaspoon Salt To Taste

Preparation

Heat up oil on medium heat. Toss in spices to toast for a brief minute until mustard seeds begin to pop and everything becomes fragrant.

Add in ginger and onions and stir-fry for 1 minute, until the onions are translucent.

Scatter in snake gourd and tomatoes. Add salt and a splash of water. Cover and leave to steam for 5 minutes. Stir every minute or so. Add more water if necessary.

Once the gourd is tender, dish up!
