Snake gourd chock full of spices to keep your tastebuds on fire.
Heat up oil on medium heat. Toss in spices to toast for a brief minute until mustard seeds begin to pop and everything becomes fragrant.
Add in ginger and onions and stir-fry for 1 minute, until the onions are translucent.
Scatter in snake gourd and tomatoes. Add salt and a splash of water. Cover and leave to steam for 5 minutes. Stir every minute or so. Add more water if necessary.
Once the gourd is tender, dish up!
