Use these slow roasted tomatoes on pasta, on top of chicken, or just pop them in your mouth. Not only are they delicious, but the scent of them roasting will soothe your soul.
Preheat oven to 225ºF. Slice tomatoes in half lengthwise. Lay cut side up on parchment-lined baking sheets. Brush with olive oil and sprinkle with sea salt. Place garlic cloves in between tomato halves. Roast for 4 hours. Eat immediately or store in the refrigerator with extra olive oil drizzled on top. You can use these in pasta, to top chicken or beef, or just for snacking!
