This very simple sauce is a good basic Italian recipe that tastes good on its own or used in other dishes such as chicken parmesan.
In a large pot, heat the oil over a medium-high flame. Add the diced onions and garlic and saute until the onions are translucent. Dice and add the celery, carrots, and 1 teaspoon each of salt and pepper. Saute until all the vegetables are soft, about 10 minutes.
Add the tomatoes, basil, bay leaves, and simmer uncovered over low heat until the sauce thickens, about 45 minutes. Remove and discard the bay leaves.
I use my food processor for the chopping in this recipe. It makes it quicker and easier.
This sauce freezes well.
