A delicious and simple side dish to accompany any protein.
Boil the potatoes in lightly salted water until fork tender but not falling apart. Drain the potatoes and put back into the pan with the butter, a drizzle of olive oil, parsley and salt and pepper. Mix up gently so the potatoes don’t break apart and then serve hot.

I love parsley butter new potatoes! I usually cute the potatoes in half or quarters so the cut surface absorbs more of the flavor. Thanks for sharing!
