Description

An easy and delicious side that will impress!

Ingredients

  • 1 package Frozen Chopped Spinach (10 Oz Size)
  • 3 whole Serrano Peppers, Stems Removed And Chopped
  • 3 ounces, weight Cream Cheese
  • 2 Tablespoons Milk
  • ¼ cups Shredded Parmesan Cheese Plus Extra For Topping
  • 1 teaspoon Salt
  • 1 teaspoon Ground Black Pepper
  • 1 teaspoon Garlic Powder
  • 4 whole Tomatoes

Preparation

Cook spinach according to package directions then drain and squeeze out excess water.

Preheat broiler.

Place spinach and all remaining ingredients (except the tomatoes) in a saucepan pan and heat over medium to medium low heat, stirring occasionally. Cook until heated through and cheese is bubbling.

While spinach is cooking, cut the tops off the tomatoes and using a spoon, scoop on the seeds and some of the inside of the tomatoes.

Preheat your broiler. Put the tomatoes into a baking dish. Stuff tomatoes with spinach and sprinkle with more Parmesan cheese.

Place tomatoes under the broiler until cheese starts to melt, approximately 3 to 5 minutes. Keep a close eye on the food under broiler, that can burn food really quickly.
