A wonderful side dish!
In a pot of boiling water, add haricots verts and blanch 2 minutes. Remove from pot with a slotted spoon into an ice bath to stop cooking. After several minutes, remove, drain, and dry on paper towels.
In a skillet on medium-high heat, add olive oil and swirl around skillet to coat. Immediately add haricots verts and sear 2–3 minutes. Reduce heat to simmer while you prepare feta and lemon mixture.
In a bowl, using a hand mixer, add feta cheese, lemon juice and zest, and black pepper. Whip on low for several minutes. Add into skillet and very gently stir to combine with haricots verts. Serve immediately and enjoy!
We love these with a standing beef rib roast.
