Thinly sliced potatoes layered with onions, covered in a creamy cheddar cheese sauce and slow-cooked in the crockpot.
Spray a medium to large crockpot with cooking spray.
Layer crockpot with a layer of potatoes and then a layer of onions. Keep doing this until no more remain.
In a large saucepan add butter, flour, salt and pepper. Over medium-low heat, stir until butter is melted.
Gradually whisk in milk and cream until no lumps remain. While stirring, cook until bubbly and thickened. Stir in cheese and heat until melted, about 10 minutes.
Pour cheese sauce over the ingredients in the crockpot. Cover and cook on high for 4 hours or on low for 5 to 7 hours.
