A baked potato in a scalloped form. Much healthier and tastier.
Preheat oven to 450ºF.
Wash and scrub potatoes. Dry well. Slice thin slices about 1/4″ thick across the whole potato. Do not slice all the way through. Once sliced, brush with olive oil and poke cheese in between slices.
Bake on a cookie sheet for 1 hour. Check and make sure inside slices are cooked through. If not, cook until soft. Sprinkle a little more cheese over the top if desired and bake 5 more minutes.
Sprinkle with green onions and dip in ranch if desired! Enjoy.
