A savory corn pancake (think potato pancake) to have as a side dish. I used leftover corn that I removed from the cob. Great clean-up-the-leftover -veggies recipe as you could probably make these with leftover broccoli, too.
Dice and saute bacon and onion until cooked.
Add to the rest of the ingredients to make a pancake-like batter.
Drop by tablespoon into a hot nonstick pan coated with vegetable oil.
Brown on one side (just like a pancake), flip and brown on the other side.
Serve. Great with some extra sour cream on top.
