This spinach recipe is so easy to make, is incredibly healthy, and pairs perfectly with a baked chicken breast!
1. Heat a skillet over medium-high heat. Add extra virgin olive oil and minced garlic; saute until golden, about 45 seconds.
2. Add onions; saute until caramelized (about 2 minutes).
3. When onions have caramelized, add the fresh spinach leaves to the skillet; saute until reduced.
4. When spinach is almost reduced, add cherry tomatoes; saute 1 minute.
5. Remove skillet from heat; add crumbled light feta cheese.
6. Season lightly with salt and pepper to taste.
