An easy, flexible side dish. Or in my case, a delectable lunch.
The measurements are approximations and can be adjusted to how many people you want to serve. Chop the tomato (or half a tomato, depending on the size) and saute in olive oil with garlic for approximately 2 minutes or until your desired “mushiness.” Add in the spinach and cook, stirring every once in a while until wilted—again, to your desired level of wilt. Remove to a plate or serving dish. Crumble the bacon (I like it warm) over the top. Season to taste. Enjoy!
