Description

Creamy polenta is rolled into pretty spirals filled with sauteed greens. Comforting. Healthy. Flavorful. Pretty. What’s not to love?

Ingredients

  • 5 cups Vegetable Stock
  • 2 cups Coarse Grind Polenta
  • 3 Tablespoons Unsalted Butter, Divided
  • 1 cup Hard Cheese, Such As Parmesan, Asiago Or Romano, Shredded
  • 1 whole Large Onion, Diced
  • 3 cloves Garlic, Minced
  • 2 boxes Frozen Chopped Spinach, Thawed (10 Ounces Each)
  • 1 dash Nutmeg
  • 1 teaspoon Cayenne Pepper Sauce
  • 1 dash Salt And Pepper, to taste

Preparation

Bring stock to a boil and slowly stir in polenta. Reduce heat and simmer for about 5 minutes, stirring frequently, until very thick. Remove from heat and stir in 2 tablespoons of butter and the cheese.

Line an 11 x 17 inch baking pan with plastic wrap and then spray lightly with oil.

Pour polenta onto baking sheet and spread it out evenly, to about 1 inch thickness. Cool to room temperature.

Saute onion in remaining 1 tablespoon of butter for about 2 minutes over medium high heat, until softened. Add garlic and cook another minute or two until fragrant. Add in spinach and saute for a few more minutes, until moisture is removed. Stir in nutmeg, hot sauce and add salt and pepper to taste.

Spread greens evenly on top of polenta. Carefully roll up polenta like you would a jelly roll, rolling from the widest side. Chill until set.

Remove roll from refrigerator and slice into 2 inch thick pieces and place spiral sides up on a serving platter. Microwave for about 2 minutes, until heated through.
