Sauteed Green Beans with Bacon

Description

Because all vegetables are better with a little bacon! But as always, still a healthy side dish!

Ingredients

  • 1 pound Center-cut Bacon
  • 1  Onion, Sliced
  • 1 Tablespoon Olive Oil
  • 2 pounds French Green Beans
  • ½ cups Slivered Almonds

Preparation

In a large skillet over medium heat, cook the bacon until crispy on both sides. Drain on paper towels. Once cool, crumble and set aside.

Drain the excess grease out of the skillet and turn down the heat to medium low. Add in the onions and cook slowly until caramelized and golden brown, about 20 minutes. Stir occasionally. Once cooked, remove from pan and set aside.

Clean pan and heat olive oil over medium heat. Once hot, add in the green beans and saute for about 20 minutes. (Note: If your pan is not large enough to easily stir the green beans, split the green beans into 2 pans).

When the greens start becoming tender but are not yet fully done, add in the slivered almonds, crumbled bacon, and caramelized onions and cook for another 5 minutes, or until the green beans are just tender and almonds are brown and toasted.

Serve immediately!

Deliciousness in a bowl! I served this for the first time when we had company, and everyone loved them, including all the kids at the table. I halved the recipe and regretted it, because they disappeared and I didn’t have any leftovers to enjoy later. This recipe is now a staple in our house!
