Description

These aren’t your momma’s nasty Brussels sprouts you fed to the dog (or at least, that’s what I remember). These are sauteed with bacon and topped with nuts. Even my kids eat them!

Ingredients

  • 4 slices Thick Sliced Bacon Cut Onto Inch Size Bites
  • 2 Tablespoons Olive Oil (Optional, Use Only If You Don't Plan On Cooking With The Bacon Drippings)
  • 20 whole Brussels Sprouts Sliced Into 1/4 Inch Slices
  • ½ whole Medium Size Onion, Diced
  • ½ cups Sunflower Kernels Or Any Nut Of Your Choice

Preparation

Cut up the bacon and fry until crispy. Transfer to a paper towel. Now here is where the recipe is up to you. If you are watching your weight, clean out the pan and heat 2 tablespoons olive oil to the pan; if you are feeling naughty, leave the bacon fat in the pan. Add ½ onion diced, cook until translucent. Add Brussels sprouts and saute till al dente. I like mine a little brown. I find they become sweet. Make sure you salt and pepper the veggies. I have made the mistake of forgetting and my family was not happy. This veggie needs the salt. Add the bacon back to the pan and top with ½ cup of your favorite nut. Sunflower or almond is what I prefer, but candied pecans would be nice too!

So good! A new favorite at our house! I also didn’t add nuts, only because we didn’t have any, and it was still amazing!

I just made these for myself and my husband tonight. I think I tried to cook them on too high a heat, so they began to brown before they got tender, but had I cooked them more slowly, I think they would have been perfect. Hubby loves them!! I also didn’t add nuts. I thought they were perfect with just the bacon.
