Description

A different but delicious way to serve broccoli. The sauce packs a punch in flavour and is easy to pull together on a busy night. Great as a side or main.

Ingredients

  • 2 heads Broccoli
  • ½ cups Water
  • 2 cloves Minced Garlic
  • ½ teaspoons Vegetable Or Chicken Stock Powder
  • 1 Tablespoon Sweet Chili Sauce
  • 2 Tablespoons Crunchy Peanut Butter, Heaped
  • ½ cups Coconut Milk (or Water)

Preparation

Chop broccoli into small pieces, including the stem.

Heat water, garlic, stock powder and sweet chilli sauce in a large pan.

When boiling, add the broccoli and cook until it is slightly underdone, stirring a few times to ensure it is evenly cooked.

Add the peanut butter and stir until combined. It will become quite thick and gluggy.

Add the coconut milk or water a little at a time until the sauce reaches a consistency of a thick shake (sorry, couldn’t think of another comparison!).

Taste. If you prefer more peanut flavour, then put in some more peanut butter and add a little more liquid accordingly. If you like more heat, add more chilli sauce.

Serve over rice.

Just add the peanut butter right in there with the water. The water has all the great flavor and it helps thin out the peanut butter (and it’s easier!).

Hi! Do you drain the broccoli water after the broccoli is cooked, or just add the peanut butter right to the water and broccoli? thanks!
