This is my absolute favorite way to eat sweet potatoes: simply chopped and roasted.
The servings will obviously vary based on how many potatoes you choose to chop up. Click on the “Related Blog Post” for a full picture tutorial.
Wash potatoes and cut out bad spots. Quarter the potatoes. Then slice into 1″ or so chunks. Line a sheet pan with parchment paper. Place chopped potatoes on the sheet pan. Drizzle and toss with olive oil and salt.
Roast in a 350F degree oven for 30 minutes until tender. Enjoy!
