A perfect way to use up those sweet potatoes—a great side for any meal!
Preheat the oven to 400 degrees and spray two baking pans with cooking spray. Wash and peel the yams.
Cut them into wedges. They don’t have to be perfect—rustic is good here!
Toss the potato wedges onto the pans and drizzle with olive oil. Season to taste with the salt, rosemary, and thyme.
Bake for 40-45 minutes or until tender, turning the wedges two or three times to prevent excessive browning.

We had these for a Sunday dinner recently. They are a hit with my family. Very good!

I also have made these before, basically all the same steps, but using basil and kosher salt. Very yummy. Hard to get perfect everytime for me though. My mom and I both make these and sometimes they are perfect, and sometimes soggy or too done. We havent figured it out yet, but we do know that even when they have been BURNED they still get eaten up!

I do this with Sweet Potatos also. Besides the olive oil and salt, I use a bit of cheyanne and onion powder. I’ve also just used “hot salt”. Super good with the sweet contrast.

Hi – I use ‘sweet potatoes’ since they are a bit more nutritious.
I add paprika, oregano, and garlic salt with the oil.
Kudos to ‘sweet potato fries’ !! Yummy.
