A great way to use the summer veggies at the store and have a healthy side for dinner.
Wash zucchini and squash. Preheat oven to 375ºF.
Cut tops and bottoms off squash and zucchini. Slice lengthwise in half and then cut in 1/4 inch slices. Slice onion into small wedges. Toss zucchini, squash, onion, peeled garlic, salt and pepper, and olive oil together in a bowl. Spread out on a pregreased roasting pan and cook for about 15 minutes, stirring halfway through.
Once done, discard garlic cloves and serve.
