A fantastic kick to a versatile veggie. Great side dish!
Preheat oven to 425ºF.
Remove core of cauliflower and cut stalks to separate. Cut florets to desired size (we like ours fairly small). Rinse well, drain, and pat dry with paper towels. Transfer to a large bowl.
Melt butter in a microwave safe bowl. Add melted butter, smoked paprika, and black pepper to cauliflower, stirring well to coat florets. Transfer to a rimmed nonstick baking sheet, keeping cauliflower in a single layer. Drizzle with olive oil.
Roast 20 minutes. Serve and enjoy!
