Description

Roasted red potatoes are a delicious side dish. The potatoes are drizzled with a dash of grapeseed oil and seasoned with garlic and herbs. A quickly prepared side dish that only needs a few turns in the oven to ensure the potatoes are crispy.

Ingredients

  • 1 pound Red New Potaotes
  • 2 Tablespoons Grapeseed Oil
  • 2 Tablespoons Chopped Parsley
  • 2 Tablespoons Chopped Tarragon
  • 2 Tablespoons Chopped Thyme
  • 3 cloves Finely Minced Garlic
  • ½ teaspoons Salt
  • ½ teaspoons Pepper

Preparation

Preheat oven to 400ºF. Scrub the red baby potatoes.

In a bowl, combine grapeseed oil, chopped parsley, tarragon, thyme, minced garlic, and salt and pepper to taste. Add the red potatoes and coat potatoes completely with the herb mixture.

Spread the potatoes on a cookie sheet to lay flat and cook for about 45 minutes. Turn the potatoes occassionally to crisp and cook completely. Check the potatoes by pricking with a fork after 45 minutes to see if potatoes are done. Additional time may be needed.

Serve immediately.
