Description

Ratatouille simply made by roasting everything on a baking sheet in the oven. How simple!

Ingredients

  • 1 whole Eggplant, Diced
  • 2 whole Yellow Squash, Diced
  • 1 whole Yellow Bell Pepper, Diced
  • 1 whole Red Bell Pepper, Diced
  • 1 whole Green Bell Pepper, Diced
  • 2 whole Zucchini Squash, Diced
  • ½ whole Red Onion, Diced
  • 2 cloves Garlic, Minced
  • 3 Tablespoons Olive Oil
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Dried Italian Herbs (oregano, Basil, Marjoram, Thyme, Rosemary, Savory, And Sage)

Preparation

1. Preheat oven to 400 degrees. Combine vegetables, olive oil, salt, and herbs in a large bowl. Mix well.
2. Place vegetables in a single layer on a large sheet pan. Roast vegetables until browned, about 20-30 minutes at 400 degrees.
