Roasted whole pattypan squash with feta and Greek seasonings.
Place your squash in a shallow pan with about 1/2 inch of water. Over medium/high heat, boil until fork tender.
Scoop out the centers and set aside to cool. When cooled, mix the scooped-out flesh with the crumbled feta.
Drizzle the squash shells with a touch of olive oil and place in a preheated 375ºF oven for about 20 minutes or until browned. Add back in the squash/cheese mixture and broil for about 5 minutes.
Sprinkle some Greek seasoning or a touch of feta/oregano salad dressing.
