Roasted carrots with a sweet and savory glaze.
1. Preheat oven to 425ºF. Cut the carrot tops off but leave an inch or so ( I like doing this for display).
2. In a large bowl, combine oil, garlic salt and nutmeg together. Toss carrots in the mixture to coat all of the carrots.
3. Place into the oven for 20-30 minutes, or until carrots are tender, not mushy. Make glaze by combining honey and maple syrup; set aside.
4. As soon as carrots are finished cooking, place then into a large bowl and coat with the glaze. Place on a serving tray and drizzle the remaining glaze.
Note: Do not place the glaze onto the carrots while they are cooking, the glaze will burn in the oven.
