Delicious and simple to make. Nothing beats cauliflower roasted in bacon fat and topped with cheddar. Heaven!
Preheat your oven to 450 degrees F. In a large bowl toss the cauliflower florets with the two tablespoons of bacon fat. Scatter the florets on a rimmed sheet pan {preferably aluminum}, and season with sea salt and pepper. Cook until tender, about 20 minutes, tossing halfway through. Finally scoot all of the cauliflower to the center of the sheet and top with the cup of grated cheddar. Return to oven and cook until cheese melts, about 2 minutes. Toss again before serving.
