This is my all time favorite way to make cauliflower! Even the kids love (ok…like) it. The garlic becomes soft and roasty and the cauliflower gets a crisp-ness to it that is irresistible…
Preheat over to 450.
Wash and cut the cauliflower into bite sized pieces.
Peel the garlic. I know the recipe calls for 20 cloves, but this can easily be doubled, if you love garlic like I do!
Toss the garlic and cauliflower in the oil. Sprinkle with salt and pepper…
Roast in a shallow roasting pan for about 45 minutes, be sure to give your veggies a stir every once in a while.

I did this dish this week and it was sooo good. Very very easy and yummy. Loved it.
One of my other favorite cauliflower dishes is Mashed Cauliflower, like mashed potatos. Boil in chicken broth and butter for awesome flavor. don’t boil to much. just till soft or you’ll end up with cauliflower soup.
