Roasted cauliflower, sauteed apples seasoned with curry. This side dish is a perfect balance of comfort and health!
Preheat oven to 400 F.
In a large bowl, combine cauliflower florets, olive oil and curry powder. (If you can, I recommend that you use Madras curry powder.) Mix thoroughly and toss evenly onto a baking sheet. Roast for 25 minutes.
While cauliflower is roasting, melt butter in a sauté pan over medium heat. Core, then thinly slice the apple and add it into the sauté pan. Sauté for 5 to 8 minutes until golden.
Combine roasted cauliflower and apples in a large bowl and season with salt and pepper. Grate cheese on top and serve immediately.
