Stinky, maybe. Delicious, definitely. Ignore your inner child screaming “Nooo!” and give these little cuties a chance!
Preheat the oven to 425ºF.
Scatter Brussels sprouts, salt, red pepper (if using), brown sugar, and olive oil in a roasting pan or rimmed baking sheet. Roast sprouts for 20-30 minutes, shaking once, until sprouts are brown on edges and cooked through.
Transfer to a serving dish. Drizzle with the balsamic and sprinkle the crispy prosciutto over the Brussels sprouts.
