Description

Think you hate Brussels sprouts? Think again. Roasted Brussels Sprouts with Dried Cherries and Pecans are savory and sweet with just the right crunch.

Ingredients

  • 1 pound Brussels Sprouts, Trimmed And Quartered
  • ⅓ cups Pecans, Chopped
  • ½ whole Small Yellow Onion, Cut Into Thin Slices
  • 2 teaspoons Cooking Oil, Such As Grapeseed, Avocado Or Canola Oil
  • ⅓ cups Dried Cherries
  • Salt And Pepper, to taste

Preparation

1. Preheat oven to 475 F.
2. In a large roaster pan, toss trimmed and quartered Brussels sprouts, pecans and onions with oil to coat them. Put pan into the oven.
3. Roast for 10 minutes, then stir and add cherries. Roast for 5-7 more minutes until cut sides of sprouts are browned.
4. Remove from oven. Add salt and pepper to taste.
