Ree featured this recipe on The Pioneer Woman Cooks blog awhile ago, from her friend Pam Anderson. I couldn’t find it anywhere on Tasty Kitchen, and want it to be in my Recipe Box, so I’m submitting it. Hope I’m not stepping on toes! (Photograph courtesy of Ree Drummond.)

Ingredients

  • 8 whole Slices Bacon, Halved
  • 1 whole Medium Onion, Cut Into Small Dice
  • ½ whole Medium Green Pepper, Cut Into Small Dice
  • 3 whole (28 Oz. Can) Pork And Beans
  • ¾ cups BBQ Sauce
  • ½ cups Brown Sugar
  • ¼ cups Distilled Or Cider Vinegar
  • 2 teaspoons Dry Mustard

Preparation

Adjust oven rack to the lower-middle position and heat oven to 325 degrees (F).

Fry bacon in a large, deep saute pan or skillet until partially cooked and until it has released about 1/4 cup of drippings. Remove bacon from pan and drain on paper towels. Add onions and peppers into the drippings in the pan and saute until tender, about 5 minutes. Add beans and remaining ingredients and bring to a simmer. (If your skillet is not large enough, add beans and heat to a simmer then transfer to a large bowl and stir in remaining ingredients.)

Pour flavored beans into a greased 13×9 inch ovenproof pan. Top with bacon, then bake until beans are bubbly and sauce is the consistency of pancake syrup, about 2 hours. Let stand to thicken slightly and serve.

Wow I’m glad you added this recipe. I’m always looking for it and seems to take me forever to find it. Now it’s in my recipe box. Love these baked beans.

I have made these several times for family functions. Each time they are a huge hit and there are no leftovers. We love it.

Served these at a picnic and people loved them. Do not skimp on the cooking time – you want a thick sauce. I like my beans a little less sweet, so next time I will cut back on the sugar just a bit. Also, I used seeded jalapeños because I did not have a bell pepper, and even the kids ate it!

I’ve made these several times, and they are fantastic. The flavor combination is so delicious, and the fact that they cook for 2 hours just makes the whole dish perfect. Yum.

I have made these a dozen times since I found the recipe on the Pioneer Woman website. They are always a hit! I always add just a touch of molasses to mine to make them taste like my grandfather’s recipe. He called them “St Peter’s Baked Beans” because when you taste them, you will think you have died and gone to Heaven! Thanks for adding to TK, I never can find my printed copy and get easily distracted by all the other tasty recipes on Ree’s site!
