This is fast way to get your veggies in, and makes a great side dish for weeknight suppers.
In a large skillet sprayed with cooking spray, over medium heat, add frozen stir-fry vegetables and heat until partially cooked. Break up ramen noodles into skillet, setting aside the flavor packet. Add water just to cover, about 3 cups. Bring to a boil, reduce heat and cover skillet with a lid, stirring occasionally to ensure that all the noodles are being cooked. Simmer until noodles are cooked and vegetables are tender. Most of the cooking liquid should be absorbed. Add one or both flavor packets from the ramen noodles to taste. Add a dash of soy sauce. Serve warm.
