Description

Purple potatoes mashed and baked with three different cheeses. A fun twist on plain ol’ potatoes. Heavenly!

Ingredients

  • 3 pounds Purple New Potatoes
  • 3 cloves Garlic, Diced
  • 4 Tablespoons Butter, Cut In Cubes, Plus More For Greasing Dish
  • 1 cup Heavy Cream
  • 1-½ cup Shredded Cheddar Cheese
  • ½ cups Grated Asiago Cheese
  • ½ cups Grated Parmesan Cheese
  • 1 teaspoon Onion Powder
  • ½ cups Panko Breadcrumbs

Preparation

Start by preheating your oven to 375 F. Grease the sides and bottom of a 9×9 baking dish with butter or non-stick spray. Set aside.

Since I have never worked with purple potatoes, I didn’t know how they reacted with heat. Instead of boiling the potatoes, I steamed them. In a large pot bring a few inches of water to a boil with a large steamer basket or colander in place. Put the potatoes in the basket, cover and steam until tender, about 15-20 minutes or until fork tender.

Remove the potatoes from the basket into a large mixing bowl. Add your garlic, butter and cream. Mash your potatoes until you reach the consistency you like. Then stir in 2/3 of your cheddar, all of your Asiago and half of your Parmesan cheese. Salt and pepper to taste. Spoon into your prepared baking dish.

In a small bowl, combine the remaining 1/3 of the cheddar, remaining 1/2 of the Parmesan and your breadcrumbs. Sprinkle over the top of the potatoes and bake for 25 minutes or until the top is golden brown.

Everyone loves mashed potatoes but imagine my surprise when I found out potatoes came in my favorite color. So many options…so many recipes… I decided to start with my favorite, mashed potatoes. These little purple potatoes are fabulous!
