This is a pumpkin variation of a traditional Italian dish that could easily go with a holiday meal. We enjoy this with shrimp since the flavors complement each other well, but I believe it would go very well with turkey or ham, too!
Melt the margarine on medium heat and sauté the garlic until soft. Stir in the pumpkin and grate a little nutmeg into the pot. Stir for 1-2 minutes.
Stir in the whipping cream and bring to a low simmer. Stir frequently, letting thicken for 5-6 minutes.
Stir in the Parmesan cheese and stir frequently until desired thickness. Season with salt and pepper.
Serve with cooked fettuccini.
