This recipe makes a great vegetarian dish that goes well with any main entree for lunch or dinner.
Wash peppers then carefully cut out the stem and remove the seeds, so that you have a hollow pepper.
Preheat oven to 350ºF.
With a potato masher, mash potatoes in a bowl, then add garlic, onion, salt, black pepper and mozzarella cheese. Mix to combine.
Stuff the peppers with the potato mixture. Stand them up in a baking dish and pop in the oven for 20 minutes or until bell peppers are tender.
Serve as a side dish or main dish.

We need a bit of help before posting:
– You mention to mash the potatoes—are they cooked first? Please add this additional info into the instructions.
– I added that the garlic is minced and the cheese is shredded; but in the future please do this yourself and make sure to include the prep in each ingredient line.
When done making the changes, just click ‘make recipe visible’ and ‘save’ and we’ll get this posted!
