20 minutes from prep to table.
Preheat oven to 250ºC (480ºF).
Wash and pierce potatoes with a fork. Place on a microwave safe plate and microwave for 3 minutes on high. Turn them over and microwave for another 3 minutes or until soft and cooked through.
Cut potatoes in half lengthwise and place on a baking tray, skin down. Drizzle with a little olive oil and sprinkle with salt and pepper. Grate or crumble cheese over them and place in the oven. They’re done when the cheese is melted and bubbly.
Mash avocados in a bowl with a fork. Add green peppers, red onions, and apple cider vinegar. Mix. Add salt and pepper to taste. Spoon onto potatoes and enjoy.
Notes: If you want some extra cheesiness, add a little scoop of cream cheese to each potato half.
