This is a very simple start to many easy, delicious sides. Change the potatoes to sweet potatoes, include onions or garlic in the layers, or add rosemary or another herb. The variations are endless.
Slice potatoes as thinly as possible. I like to use a mandolin.
In an 11″x7″ dish, place a layer of potatoes, lightly sprinkle with salt, pepper, a little butter, and cheese. Reserving a third of the cheese for the final layer, place another layer of potatoes, and sprinkle again with salt, pepper, cheese, and butter. Continue layering like this until all the potatoes are used up. Pour milk over the top of the potatoes. Sprinkle the final layer with salt, pepper, and reserved cheese. Bake uncovered at 425F for 45 minutes.
