Preheat oven to 400 F.
Cut squash in half and scoop out the seeds. Brush the flesh with the olive oil and sprinkle with salt and pepper. Place the squash halves flesh side down on a foil lined, non-stick sprayed rimmed baking sheet and roast for 45 minutes. Check for done-ness by sticking a fork through the skin and into the flesh. It should go through the flesh easily. If not, roast it for a bit longer. When done remove it from the oven.
Scoop the flesh from the skins and into a bowl and gently break apart the flesh with a spoon or fork. It will just fall into strands. Season with salt and pepper to taste.
