Easy, crispy, cheesy, yummy – what else can you ask for from the humble potato?
Preheat oven to 425 degrees F.
Place pats of butter on a large jelly roll or other sheet pan with sides and put in oven to melt.
While butter is melting slice potatoes thinly (not paper thin, we’re looking for fries, not potato chips).
When butter is melted, spread it evenly over entire pan and place slices of potato in pan making sure not to overlap them (you may have to use more than one pan depending on the size of your slices – if you do, just use the same amount of butter for the second pan).
Bake for 10 minutes, turn potato slices over and bake for another 10 minutes (again, you’re looking for nice even crispy brown, not completely crispy chips. You may need less oven time if your oven tends to run hot).
Sprinkle grated parmesan on top of potatoes and return to oven for 2-4 minutes or until cheese gets a bit crispy and melted.
Serve and smile!

These sound yummy. I may have to give it a try but I think I will add garlic too!
