Transform leftover mashed potatoes into delicious Parmesan Mashed Potato Patties. These lightly fried patties have a lovely crisp outside and a creamy, cheesy inside.
In a large bowl mix together all of the ingredients except the oil. Using your hands, form into 1/2-inch patties and flatten with your palms. Set them aside on a plate for a moment.
Heat the oil in a large saute pan over medium heat.
Gently place the patties into the pan and lightly flatten with a flat spatula. Be careful not to overcrowd the pan. Cook until golden brown for about 3-4 minutes per side. Remove from the pan and set aside on a paper towel lined plate while you finish frying the rest. Serve immediately.
