Mashed potatoes loaded with Parmesan cheese, sour cream and basil.
Clean and wash the potatoes, poke a few holes in them, put them on a microwave safe plate and microwave them. Use your microwave setting for baked potato or just cook them until they are soft. Cooking times will vary depending on the size of the potato. Most medium to large potatoes will take between 8-12 minutes to cook at full power.
Add potatoes into a large bowl and mash them. Stir in sour cream, olive oil, butter and Parmesan cheese. Mix well and add black pepper, garlic salt and basil. Stir well and serve hot.
Garnish with additional Parmesan cheese or basil leaves.
