I never really cared for asparagus much before trying it this way. Now, I can eat this as my main meal! The asparagus is slightly crisp and very tasty, but still healthy. My kids love them, and they came up with the name.
Preheat broiler. Rinse asparagus, and chop about 1 1/2 inches off the bottom of each spear. (I do this in batches, not each separate spear. That would up my prep time!!) I cut on a diagonal, though I’m not really sure why.
Place the spears on a cookie sheet in a single layer.
Drizzle the olive oil onto the spears, then sprinkle on the delicious sea salt. (You don’t need a lot of the salt to taste. It’s very flavorful.)
Last, toss the parmesan cheese on top.
Stick the pan under the broiler for approximately 5 minutes. The spears will be bright green, and the cheese will be barely toasted. The spears will still be slightly crisp when you bite into them.
