A simple side made with readily available ingredients.
Wash and thinly slice the potatoes. Peel and thinly slice the onions. Melt the butter in a wide deep skillet (cast iron is really nice for this), layer the potatoes on the bottom of the pan, and sear until the potatoes take on a golden hue. Flip the potatoes and add the onions, salt, and dill. Cook until potatoes are tender, about 20 minutes.
If dill is not on hand, rosemary is an excellent substitute.
