Description

I love zucchini. I could eat it every day and often do in the summer. There’s nothing better than a big plate of zucchini for dinner. This recipe is easy and delicious and brings out the slight sweetness of the zucchini.

Ingredients

  • 1 Tablespoon Olive Oil
  • 6 whole Medium Zucchini
  • ½ teaspoons Kosher Salt
  • ½ teaspoons Black Pepper

Preparation

Preheat oven to 350ºF. Spread the olive oil on a cookie sheet with a pastry brush.

Cut the ends off each zucchini, then cut zucchini into 1/4-inch slices lengthwise. An individual medium zucchini yields about 4 to 5 slices. Place the slices on the cookie sheet. Brush each slice with the pastry brush. This will lightly coat the slices with olive oil.

Bake for approximately 20 minutes. Turn the zucchini after 10 minutes. Watch so that the zucchini starts to brown, but don’t let it overcook. You don’t want it to be too soft. Remove from oven and sprinkle with salt and pepper.
