All I can say is wow! Where have these been my whole life? Roasting takes away their bite and makes them completely addictive. A must try!
Preheat oven to 425 F. Place washed, trimmed, and cut radishes on a rimmed sheet pan. Toss well with olive oil until all surfaces of the radishes are covered with oil; sprinkle with kosher salt and pepper. Arrange radishes on the pan so their cut sides face down. Roast in preheated oven for 15-25 minutes, or until the radishes shrivel and the cut sides caramelize.

I’m not a huge fan of radish,but this is interesting. I’ll have to pick up some and try this recipe out.I have known for a long time that cooked radish tastes different than the raw state and thought about cooking it…someday. Thanks for inspiring me to finally give it a go!
