Yummy baby carrots and beans cooked in, that’s right, ORANGE juice … could not be easier!
First, I don’t really measure when I cook, so add however many veggies you want, and then just add enough juice to make sure there is like 1/4″ or so at the bottom on the pan.
Spray pan on stove ( make sure you’re using a deep pan).
Add veggies, orange juice and pine nuts. Cover and cook on med-high for 5 minutes.
Uncover and cook until OJ had disappeared. Some veggies will have a charred look, which is yummy! Make sure once the cover is off, you stir the veggies every so often so they don’t char too much on one side. Enjoy
