A cheesy broccoli casserole with a kick. I came up with this recipe completely by accident. I started with one recipe, didn’t have all the ingredients, so I substituted … and loved the result!
In a microwave-safe dish, add just a little (1/2 to 1 cup) water to the broccoli and cover, then microwave on high for 10-12 minutes. Meanwhile, saute the onion in butter. Add cream cheese to the onion mixture and cook on medium heat until melted (stir constantly). Add the soup to the cheese mixture, as well as the chilies, if desired. When broccoli is done, drain well, then combine with cheese mixture in a casserole dish. Top with French fried onions and bake at 350 degrees for 25 minutes or until topping is golden brown and mixture is bubbly around the edges.
