Take a break from potatoes with this nutty and delicious side dish.
Add the oil and onion to a pot and saute on medium heat until the onions have softened and lightly caramelized.
Add the stock and bring to a boil. Add the couscous to the boiling liquid, stir once, cover and turn off the heat. Let it stand for 5 – 10 minutes until the liquid has been fully absorbed.
Fluff the couscous with a fork, season with salt and pepper and stir in the parsley and pistachios.
