Description

My great-grandmother was known for her macaroni and cheese. Every family gathering we eagerly awaited the arrival of her trademark macaroni dish and couldn’t wait to dig into this fantastic homemade dish!

Ingredients

  • 2 cups Ready-cut Noodles, Cooked According To Box Directions
  • 2 blocks (10 Oz. Size) Cracker Barrel Sharp Cheese, Shredded Or Block
  • 5  Eggs, Beaten
  • 2 cans (12 Oz. Size) Evaporated Milk
  • 1 cup (approximately) Whole Milk
  • ½ teaspoons Salt (or Salt To Taste)
  • ½ sticks Butter Or Margarine

Preparation

Spray or lightly grease a large, deep baking dish, about 4-quart size. Preheat oven to 325ºF (about 190ºC).

Place the hot cooked noodles and the cheese into the dish. (Nanny softened the cheese and then mashed it with a fork. I have used shredded cheese with great success.)

Add the eggs and canned milk into the hot noodles and mix to combine. Then pour regular milk in until you reach your desired consistency. Then add salt and stir to combine everything. Dot the top with margarine and bake at 325ºF (about 190ºC) for about 45 minutes.

For a change of texture, you can stir the macaroni as it bakes and becomes firm on the edges; I find about every 10 minutes works for me.

It should be noted that these ingredients are not available in all places. However, I have found that this recipe is very easily adaptable. I have used medium cheddar cheese (which in the UK is white) and found it to have an equally nice flavor and texture.
